COCOA POWDER ALTERNATIVE (CEKACO DB)
CEKACO DB is a natural and economical alternative to cocoa powder.
The aroma of CEKACO DB is suggestive of real cocoa and its colour is similar to the alkalized cocoa powder.
CEKACO DB is produced in the hygienic factory from the natural tropical fruit, among others, fruits from meranti, palm and sapodilla trees. It is suitable for human consumption. These tropical fruits have been consumed by human for decades
CEKACO DB is contains 10% - 12% vegetable fat. The fat in CEKACO DB may contain hydrogenated vegetable fat.
Both CEKACO DB and cocoa powder have similar finess, colour, moisture contain, pH, microbiological standards, ash content, etc.
It is mixable with cocoa powder, cocoa butter, cocoa liquor, cocoa butter equivalent fat (CBE), cocoa butter extender fat (CBX), and cocoa butter substitute fat (CBS).
CEKACO DB does not contain sugar.
The physical and chemical properties of CEKACO DB are very similar to cocoa powder but it does not contain Theobromine.
As CEKACO DB contains 10%-12% vegetable fat, one does not need to change the formulation of compound chocolate, when switching from cocoa powder to CEKACO DB.
CEKACO DB has similar micro bacterial plate counts as in cocoa powder; hence the risk of developing the soapiness off taste in Lauric compound chocolate is greatly reduced.
