White or off-white crystalline granule or powder with a cool sweet taste that is not easy to disappear. It's about 250-350 times sweeter than cane sugar. The lowest sweet density that can be felt is 0.002%. There is a little aftertaste when the concentration is too high. Its melting point is 196-198 centigrade. It is heat stable and acid/alkali stable (PH3-9). For example, if we add it into soft drink of PH3.0 for 30 days in room temperature, there is no change at all. The solubility in water is about 0.12%. It is quite easy to dissolve in ethanol. As a non-fermentable sweetener, it is quite suitable for the food that is not easy to sterilize by heat, which doesn't cause maillard reaction and keep finished product white. Among natural sweetening agents, its taste is quite similar to that of cane sugar. Its molecular weight is a little large and penetrability is poor, which is its shortcoming.
